Lyndi Fultz: Which Rice is Best For Your Recipe

#CelebratingNationalRiceMonth

It’s September and you know what that means? I is National Rice Month and I thought it only seemed right to talk to you about rice. I mean – I AM a Riceland brand ambassador after all! Instead of loading this post up with inspirational recipe suggestions I thought I would keep it simple and chat about the different types of rice.

In a nutshell, rice is delicious and versatile. However, there are a few nuances that make the most sense for specific dishes. Today we are going to learn about four types of rice – brown rice, long grain rice, parboiled rice and medium grain rice. And, more importantly, which rice is best for your dish?

Celebrating National Rice Month with Lyndi Fultz {Riceland}

For several years, Arkansas Women Bloggers has enjoyed celebrating our Arkansas rice farmers and producers through our relationship with Riceland Foods.

Riceland provides marketing services for rice and soybeans grown by its 6,000 farmer-members in Arkansas and Missouri. Each year, its 1,500 employees receive, store, transport process and market more than 125 million bushels (2.5 million metric tons) of grain.

Riceland is the world’s largest miller and marketer of rice and one of the Mid-South’s major soybean processors.

A major rice exporter, Riceland markets rice products under the Riceland label, private labels, as ingredients, and in bulk. Riceland products are sold across the nation and to more than 75 foreign destinations.

Generation after generation of Riceland farmers have planted, cultivated and harvested rice that carries the quality promise of Riceland Rice. That tradition continues today. Each Riceland product is backed by generations of rice farmers whose goal has always been to produce the finest quality rice in the world.

It’s our pleasure to share some of our favorite rice and related products posts some of our writers have created for Riceland’s blog. Check these out:

Ami Lee: Vegan Dirty Rice {Foodie Friday}

In honor of National Rice Month, Ami Lee shares one of her reinvented favorite Cajun dishes — Vegan Dirty Rice.

20180904_205118

I was first introduced to Cajun Cuisine by none other than Emeril Lagasse. As a child I would stay up late and watch him vigorously spicing up dishes in front of a live audience. He was enthusiastic as well as informative as he danced across his kitchen. I was later introduced to Dirty Rice by my cousin Lisa. I didn’t fully understand as a child what it was. All I cared about was that it was absolutely delicious. READ MORE

Tasty Tuesday: Sharing our Family Favorites

We have some mighty fine cooks in Arkansas Women Bloggers. This week we’re highlighting just a few of their favorite family dishes. Enjoy!

Debbie Arnold: Mamaw’s Chicken and Dumplings

Mamaw, Nonnie and Me with Chicken and Dumplings

 I was asked if I would consider writing a piece for the 2014 edition of Arkansauce, I was certainly flattered but had no idea what my subject matter would be. Topics for blog posts flow in and out of my brain constantly – and occasionally some of them stay around long enough to stick. Talking about my life in Arkansas and as a native, is something I appreciate. I really do love my home state and want everyone to know it like I do. The good, the bad, the ugly — it’s all there, but isn’t that the case regardless of wherever you plant your flag as your home? I appreciate that I was given the leeway to choose just where the trail for this piece would lead me.

Mostly, I wanted to tell the story of my grandmothers and their influence on my life. I was fortunate to grow up with both Mamaw and Nonnie who led me, loved me, laughed with me. And, when it was necessary, disciplined me. Oh, I could tell you some stories. Perhaps I will, but for now I’d love for you to go read the piece I wrote about them and the making of Chicken and Dumplings. READ MORE

Turkey Avocado Bacon Sliders are a tasty addition to your brunch table.

JEANETTA DARLEY: TURKEY BACON AVOCADO SLIDES

We aren’t shy about food. Especially where bacon is concerned.

It was a week of returning kids to their regularly scheduled programs at school and shipping others off to new adventures in towns far away.  The air was a mixture of relief and sadness. And also hunger because … well, bacon!

When life offers you changes (and you know that it will), it is always good to have your friends around.  Someone to say, “I know how you feel,” or “It will get better.” And of course, “Here, have another serving of this delicious food while I fill up your glass.”  These are important qualities in friends. apple dumplings

Keisha McKinney: Apple Dumplings

After our Making Strides Against Breast Cancer walk on Saturday, we had some apples and oranges left over.  I had totally been craving those apple dumplings that you make with Mountain Dew.  So, I snagged a couple to bring home and experiment with.

Here’s the recipe I used for inspiration and tried to just do it with the ingredients I already had at home. READ MORE

Mozzarella Stuffed Chicken - Sunday Supper

Pat Downs: Mozzarella Stuffed Chicken

The air is a tad cooler here in Little Rock.   I am so ready for Fall.  I love the aroma’s of fall cookin’ in the kitchen.  Fall by far is my favorite Season!

Tonight’s Sunday Supper consisted of Mozzarella Stuffed Chicken, Mashed Potatoes and those Best Darn French Green Beans that I have posted about.   We were pleased with tonight’s supper.

For the chicken I headed to The Fresh Market and purchased for $3.99 each the pre-stuffed mozzarella chicken breast.   These are delicious and don’t take long to make.  READ MORE

Debbie Arnold: Tomato, Peach and Basil Salad {Foodie Friday}

Peach season in Arkansas is absolutely one of my most favorite times of the year. Yes, I love strawberries. But we can get some decent organic ones, albeit NOT the best, strawberries year round. Really nice blueberries, blackberries and raspberries are generally always available, But peaches? Not so much. Which makes me anticipate their goodness even more.

With summer winding down, the last of the tomato and peach harvests and still providing just enough fruit to make this gorgeous and tasty salad. Why not stir up a bowlful today for one last bite of summer deliciousness? READ MORE

McConnell’s Barbecue Sauce for Chicken

The McConnell family lived across the street from us for many years.  Joe and Anne had three children – two boys and a girl – who were near the age of Perfect Daughter.  They were great playmates.

sweetgum ball

One year Joe decided to offer his boys a penny apiece for each sweet gum ball they would pick up out of his yard.  Now I don’t know what your experience is with sweet gum trees, but suffice it to say that while beautiful especially during  Fall, they produce millions of these prickly little seedpods that are tremendously painful when stepped upon.  I’ve busted my rear on more than one occasion just by stepping on them.  Joe figured he had found a way to entertain the boys for the day while Anne and I were out shopping and saving money.  It was a perfect plan until it wasn’t.

So what does this have to do with the very best barbecue sauce for chicken?

Hawaiian Chicken Sandwiches with Teriyaki Ginger Mayo | Julie Kohl

by Julie Kohl

I am a fan of bold flavors. The zesty combination of mayo and ginger paired with smoky grilled chicken and sweet pineapple make this grilled sandwich a tasty treat. Add in the zip of fresh sliced jalapenos and you have something amazing!

Kids are back at school and summer break may be officially over but grilling season is just getting started here in Arkansas. Our great weather makes it possible to grill out way into October and maybe even beyond. It’s a good thing, too, because you will want to make these Hawaiian Chicken Sandwiches several times before the end of the season.

Pat Downs: The Ultimate BLT

One of my favorite sandwiches is a BLT.  However, I like to add the addition of a good fluffy egg and cheddar cheese.  What makes this sandwich so ultimate?  They key is to preseason your fresh garden tomatoes and use living lettuce.   These preseason tomatoes make a great snack all alone.   I started doing this to my tomatoes when I make sandwiches, pizza’s and wraps.   The flavors will soak in and add a new life to your meals. Rachel Hough: Canning Your Own Salsa

One way that we tend to measure our summer is through the garden. It’s never truly July until the Salsa starts cooking. This year it was a tad late for our harvest, but finally it is “Salsa Time”.

This salsa recipe is my grandmother’s and has made our salsa a family and friend favorite. Want to wow people at a gathering? Want to give an amazing gift? Want to just enjoy a salsa that is mild and full of flavor? Want to use up extra tomatoes and other goodies from your garden? This salsa is just the ticket! It does take an entire day to complete, but I promise that it is totally worth it! READ MORE
