- Douse with the olive oil and toss.
- Spread the oiled up veggies on a lightly oiled cookie sheet and sprinkle with the cumin, salt and pepper.
- Bake them in the oven for about 30 minutes, shaking the pan every 10 minutes or so.
- You will know they are ready when the edges begin to brown.
- While the veggies are roasting, chop the cilantro and add it to the salsa. Stir.
- When the veggies are done, remove them from the oven and reduce the oven temperature to 350 degrees.
- Spray a 9x12 baking dish with nonstick cooking spray
- Put a layer of the salsa mixture in the bottom of the dish.
- Now put down a layer of tortillas, a layer of veggies, a handful of spinach and a sprinkle of cheese.
- Repeat the layers two additional times.
- Cover the pan with foil and bake for 20 minutes; uncover and bake an additional 10 minutes.
- Let the dish rest for about 5 minutes
- Serve to hungry friends and/or family.
- Serve with sour cream, if desired.
Notes
- Please note that you can pretty much use whatever vegetables you have in your fridge.
- You can add corn, use jalapeno, leave out the cauliflower-do what you need to do.
